What a night!!


I wish I had taken my camera and had more pictures to share but here is one of a funnel solar oven. (see below to understand why I posted this picture on my blog:)
Last night (it took me a while to finish this post so it was actually last week) I had an experience of a life time, I wasn't having a night out with the girls, or even by myself, I wasn't having a wonderful time with my kids, and I wasn't even out with Joe.


So why was it so amazing well when I went I never thought I would have come home with so much valuable information that changed my life for the good. Ok this sounds really sentimental and cheesy but it was so awesome, I know I am leaving you in suspense:) so here goes. I feel it so very important to share with all of you.


The class was called "So what do you do with all this stuff" A friend from my old ward (our ward was split up a few months back so she lives near me) held a class taught by her mother. She is actually from Richland Washington (near where I grew up) So that was cool. Anyway she came to teach this class just because she feels the importance of these things, she used her own time, resources, money etc. all because she just understands the importance of LISTENING to the prophet.


Ok so she taught us a whole gamet of things my head is still spinning a bit from all the knowledge and information she gave us, I don't think the food storage/preparedness thing truly hit home until last night. I have always known how important it is to do your food storage and be prepared but after last night I know it is a must to follow the prophets and get these things in order right now, not later now, there is no more waiting.


A little more about the women who gave the class, she has not always been the way she is now, prepared and ready for whatever may come. But she is now, she had a near death experience, almost dying (the doctors were sure she would die from bleeding internalally and dehydration. She said at that time in her life she had a priethood blessing telling her she would heal and then another blessing that told her there was a reason she was spared and she needed to find out why and then do what the Lord wanted her to do. After she healed she set out to figure out this thing the Lord wanted her to do, it took a while for her to figure out what it was that he wanted her to do. When she figured it out after prayer and diligence, she knew it was to help people to become prepared for these last days. Prepared with food storage but also with other things. She said she read an Ensign article from August of 2007 on being prepared, when she saw the picture they had that went along with the article she said she was suprised to see something there she had not seen before with preparedness items. A medical mask. The white ones that you see dentist and doctors wear to filter out diseases. Why would we need this? I kind of asked the same question in my mind. Well if there was a pandemic this would be something very essential for our family. It could save some of us, and our children. The church used to have on their website links for medical knowledge like the red cross etc. now she says they have their very own website on it and it just took place about a year to 18 months ago (I think it is providentliving.com but it might be a differnt website that they have just for medical things I am not exactly sure) and the church put a women in charge of going around the whole Wasach front and teaching and educating people on preparedness issues, and food storage. All of this has happened in the last 18 months or so, ok so don't panic like I want to do. Start today even if you haven't done a bit of preparedness at all just start today add some extra to your groceries things that can be stored do a little at a time educate youself I have a sheet that she gave us of nessasary food storage items for one person such as pounds of wheat, beans, rice, etc. what you would need for one person for a year, if enough of you want it I will post all the stuff on the blog, just comment on this post that you would like that and I will post it on my blog . It really was just an amazing evening everything really hit home. I have been feeling for a while the need to do food storage and get things up to date, and I have been doing it a little here and a little there but I am now going to take a very serious approach to it and make sure I do all I can. You know this is a terrible thought but before last night I kind of thought well if there is a huge disaster and it was close to the end of the world why would it be so bad if we died?? HUGH DEB??? What are you thinking. That means I would die not obedient to the Lords counsil of doing all I can to prepare and to take care of my children even though it may be easier to die, that is not the answer the pioneer's did not give up and thank goodness they didn't because a lot of us would not be here if they did. It is about having faith in the Lord and doing what he asks no matter what it is that he asks of us. If my children starved to death becuse I failed to heed the prophets counsel I think that would be such a horrible terrible thing especially knowing I could have done something about it.


Some of us can only do a little and that is all he is asking you to do, what you can, and he always makes up the differnce.

So just do WHAT YOU CAN:)

Anyway that was deep sorry to get so deep on you. I wasn't even sure I was going to go last night Joe was out of town and I really didn't want to pay a babysitter so I could go, but I just kept feeling the urgency that I needed to go. I know it was the Spirit letting me know that what this women had to say I needed to hear. I am so glad I went I was changed for the good in more ways than one.

Ok so now that I gave you my testimony about the whole thing.

here is a bit about what we learned...


How to separate the gluten from the wheat. What an amazing process when I went I didn't even really know what gluten was and now I think I could make meatballs out of it, ground hamburger chicken. It would take some pratice but I think I could do it. She showed us how when you are done separating the gluten from the wheat the left over product is bran and than is how they make bran flakes, never knew:)


We also learned how to bottle butter and cheese


How to sprout things and use sprouts in salads etc. when you sprout something you get so so much more nutrients from the source. my favorite sprout is lentils. I am excited to do some sprouting.


She took us outside and showed us so many differnt solar ovens you can use and buy. She cooked cookies in a pizza box, with no heat other than the sun, pretty cool hugh?


She showed us various ways to perserve things and gave us lots of websites to go to to find information.


Anyway it was just an amazing night, and at the end she asked us after learning all this stuff what would be the best thing we could share with out neighbors..... What do you think, what would you tell your neighbors.


Share the gospel with them give them the knowledge of a Heavenly Father that loves them that is the way you can best help them be prepared. When we truly understand Heavenly Fathers love for us we will be so blessed.

McCall, Idaho

We took the kids up to McCall to spend the weekend a couple of weeks ago and we had a blast, I think it was our our first offical over night family vacation with just our own little family. It was so much fun the kids had a blast! It was a bit cold but the kids still got in the water. We made some fun memories.

On the way home from McCall there is a little town called Horshoe Bend and it has a train ride you can go on that rides along the Payette River so we took the kids, it lasted about 2 1/2 hours so Joe and I were a little worried how the kids would do but they absolutly loved it, it was their first official train ride and they had a blast.

Garden

Here is our little garden... Last year we gave our garden a go in our little yard and it worked out really well. It was so fun and I learned so much. This year we are giving it a go again with a few adjustments from last year. Here is a little look, you have to look past the little weeds I didn't want to weed it until the plants had come up a little better everything has now come in really well and it has all been weeded since I took these pictures, everything has grown a bunch too, I have some green tomatoes already YEAH! so I need to take some more pictures, but here is a first round look for you.

First Grade Here We Come...

Ok this may sound a bit bad but in the last few weeks I have already been to two graduations and I only have a pre-schooler and a kindergartener oh my I thought graduation was only for seniors in high school. No you should have seen it parents had balloons there, presents the whole sha-bang all for kindergarten graduation, Kyle had me, Kambree, Kayelee, and Kapri there to cheer him on, thats it.

It was a bit sad I will admit to see him finish up his first year of school now he will go to school full time next year (all day, which I am not excited about) so life will be a little differnt and I know that will be hard for me. Kyle is a true leader an amazing little person, his teachers had nothing but wonderful things to say about him, they told me numerous times that they wished they could clone him and have more kids like him. They said they often put him at a table with kids who had trouble with dicipline or needed extra help because of his amazing leadership. They said it was so neat how at such a young age you can already see that natural leadership. It was cool for me to hear them say those things because you don't know how they will act in a new situation when you are not there and he just steped it up and helped those around him, his teacher said they specifically put him by a kid that didn't know is letters because Kyle did so he could help him along. I was very happy at the way he conducts himself when we are not around (probably better than when we are)

He was in the top of his class with two other kids. He did an awesome job. I can't help but be so pleased with my little man... Taking after my big man:) in more ways than one. The other day we were at Costco and he was jumping in the big freezers and giving some people there a good laugh and a husband and wife stopped me and made some comment about him being in the freezer and then looked at my cart full of 3 girls and said you gotta give him that he's gotta be a boy, they were glad to see even with 3 sisters he is all boy and oh believe me he is.


I do have to tell a sweeter story about Kyle while we are talking about him. We were at church a few weeks ago and he saw that my lap was empty (not often it is) and so he came and just jumped on my lap and he sat there pretty much the whole sacrament meeting, and we just shared a good 30 minutes of us time not saying much just enjoying being there at church together. That doesn't often happen and I love every minute of it. I know my days are numbered when he will sit on my lap and snuggle like that with me but I'll take it and savor it for as long as I can and then look back on these moments and just CHERISH them... my baby is growing up.




Mrs. Peterson... What an amazing teacher She did an awesome Job and Kyle just loved her, he learned so much in her class, I wish there were more teachers like her.

Our little patch


Oh so fun!


From our little garden... can you believe it.


We planted a little patch of strawberries last year and they have spred to be a not so little patch this year and we have gotten so many strawberries off it. The kids have been loving it so we went out there one day last week, I was expecting to get a little bowl and we came back with a bunch and have gotten another bowl full about that big a second time. What a yummy healthy treat!!!

I run regularly with a very good friend of mine and one morning we got talking about these wraps and she told me she had a recipe for them, so I finally got it from her and oh my they were SO SO good I made them last friday night and Joe and I both loved them it was like eating at a nice Chinese restraunt. Oh they were so good... So I though I'd share them with you all. They really were pretty easy, one tip for you though I had never bought ginger that was not ground so I asked my friend about it and ginger is a root and you can buy it in the produce section so I did and it was so fun learn a little more about ginger, so you just buy it in the produce section, peel off the skin and grate it in a cheese grater. I do think it was very important to use the fresh ginger it has a very distinct flavor and really makes the wraps taste delicious and unique.

2 more tips I will give you (but really do whatever you want, just something I tried) I used organic peanut butter that has no additives just straigt peanuts smashed it is a lot better for you then the skippy but of course you can use skippy:) I still use skippy myself for other things, and then for the teriyaki sauce there is a brand called veri (that is how it is spelled on the jar) teriyaki and it has no additives or perservatives(I think that is why it is supposed to be good) it really was good teriyaki sauce. Ok that is way too much information just try them and enjoy. If you do try them tell me what you think.

Thai Lettuce Wraps with Peanut Sauce

2-3 chicken breasts,
mincedhalf red onion, chopped finely
1 cup shredded green cabbage ( I add about 2 cups)
1 cup shredded carrots
1 T or more of grated or minced ginger (not powdered)
2 cloves garlic, minced
soy sauce or Teriyaki Sauce
Lettuce cups, washed and chilled (cut iceberg in half and peel cups apart)

Cooked Rice, about 2 cups

Saute onion in hot oil until tender. Add chicken and saute until no longer pink. Add the rest of the ingredients except soy sauce and saute about 2-3 minutes until tender. Sprinkle with soy or teriyaki sauce as desired for flavor. I also like to add some Chinese Red chili paste, About 1 T. for a little kick. Keep warm while you make the sauce, don't let cabbage get soggy!

Peanut Sauce
1/4 C. Creamy Peanut Butter
1/4 C. Sugar
3 T soy or Teriyaki sauce
4 Cloves Minced Garlic
3 T Water
2 T oil ( I used olive oil)
Thai chili paste if desired, about 1 tsp or more

**I usually double this Cook sauce in pan on low to medium heat until sugar dissolves. Whisk until smooth. Stir often and keep warm. To assemble wraps, spoon rice in first, top with chicken mixture, spoon on sauce. Dig in. This is such a nutrient packed little meal! Enjoy.

Princess

On friday we were watching a movie and those who watch many movies with me at night know I always (well almost always) fall asleep. Well on the weekends we sometimes let Kyle stay up with us. He was watching the movie with Joe and I and when the movie got over he looked over at me and saw me sleeping and said to Joe "Dad look what happened to OUR princess" (I loved that he said our) Of course I was crashed on the couch. he then said " I'll grab her blanket and you carry her up to bed" Isn't that just the sweetest thing I love my boys!!!! They take such good care of me. Just for those of you who don't know or see me all that much Joe calls me princess (I realize I am not really one but he makes me feel really good by calling me that) he calls me that often and so Kyle has picked up on that. It is pretty cute I hope some day he will treat his princess the way Joe treats me... he is lucky to have a daddy who is such a good example. I feel pretty special to be treated like a princess by a handsome King and a prince:)
