Delicious!

I run regularly with a very good friend of mine and one morning we got talking about these wraps and she told me she had a recipe for them, so I finally got it from her and oh my they were SO SO good I made them last friday night and Joe and I both loved them it was like eating at a nice Chinese restraunt. Oh they were so good... So I though I'd share them with you all. They really were pretty easy, one tip for you though I had never bought ginger that was not ground so I asked my friend about it and ginger is a root and you can buy it in the produce section so I did and it was so fun learn a little more about ginger, so you just buy it in the produce section, peel off the skin and grate it in a cheese grater. I do think it was very important to use the fresh ginger it has a very distinct flavor and really makes the wraps taste delicious and unique.

2 more tips I will give you (but really do whatever you want, just something I tried) I used organic peanut butter that has no additives just straigt peanuts smashed it is a lot better for you then the skippy but of course you can use skippy:) I still use skippy myself for other things, and then for the teriyaki sauce there is a brand called veri (that is how it is spelled on the jar) teriyaki and it has no additives or perservatives(I think that is why it is supposed to be good) it really was good teriyaki sauce. Ok that is way too much information just try them and enjoy. If you do try them tell me what you think.

Thai Lettuce Wraps with Peanut Sauce

2-3 chicken breasts,
mincedhalf red onion, chopped finely
1 cup shredded green cabbage ( I add about 2 cups)
1 cup shredded carrots
1 T or more of grated or minced ginger (not powdered)
2 cloves garlic, minced
soy sauce or Teriyaki Sauce
Lettuce cups, washed and chilled (cut iceberg in half and peel cups apart)

Cooked Rice, about 2 cups

Saute onion in hot oil until tender. Add chicken and saute until no longer pink. Add the rest of the ingredients except soy sauce and saute about 2-3 minutes until tender. Sprinkle with soy or teriyaki sauce as desired for flavor. I also like to add some Chinese Red chili paste, About 1 T. for a little kick. Keep warm while you make the sauce, don't let cabbage get soggy!

Peanut Sauce
1/4 C. Creamy Peanut Butter
1/4 C. Sugar
3 T soy or Teriyaki sauce
4 Cloves Minced Garlic
3 T Water
2 T oil ( I used olive oil)
Thai chili paste if desired, about 1 tsp or more

**I usually double this Cook sauce in pan on low to medium heat until sugar dissolves. Whisk until smooth. Stir often and keep warm. To assemble wraps, spoon rice in first, top with chicken mixture, spoon on sauce. Dig in. This is such a nutrient packed little meal! Enjoy.

I loved this they were sooo good. I kept eating that peanut sauce just plain (yea probably defeats the idea of being healthy!) but thanks for putting it on here, I loved it!
