And for a very Yummy treat that is not so healthy but oh so good.
Easy Oreo Truffles (see recipe below)
Well I saw this recipe on http://www.allrecipes.com/ and It looked so good so I had to try it. I have never made chocolates by myself before so this was a whole new thing for me something I've wanted to try, they said really easy so I thought I'd give it a stab and they were really easy and so so good we all loved them. Kayelee, Kapri and I made while them while the older kids were at school they were fun ones to make with my girls. Here is the recipe, if you try them tell me what you think.
I altered the recipe a bit so I will list the ingredients and in ( ) I will put what I used.
Easy OREO Truffles
(it looks like a lot of things to do in the recipe because I added my own commentary, really there are only a few ingredients and they really are super easy to make.) Like I said my kids helped.
Ingredients:
1 (16 ounce) package OREO Chocolate Sandwich Cookies, divided (I bought mine in bulk at Costco they are cheaper that way, you could try reduced fat Oreo's also for less fat I didn't do that)
1 (8 ounce) package PHILADELPHIA Cream Cheese, softened (I used 1/3 less fat I bet you could even use fat free and they would still taste good)
2 (8 ounce) packages BAKER'S Semi-Sweet Baking Chocolate, melted ( I used Hersery's special dark chocolate chips and melted them they were quite a bit cheaper and worked just as good you can buy extra dark chocolate chips at Winco right now in bulk and they would even be a little cheaper than the Herserys I didn't look at the ingredients though at theirs you might want to compare it to the Hersery's to make sure there are not a lot of added ingredients.) I also used so white melting chocolate I had for the white ones and blended dark and white chocolate for the light brown chocolates. If you use white chocolate make sure it is real white chocolate usually white chocolate chips are not real white chocolate so check the ingredients. You might have to buy real bakers dipping white chocolate if you want the white ones (the ones with white chocolate on the outside are my favorite).
Directions
Crush 9 of the cookies to fine crumbs in food processor; reserve for later use. (Cookies can also be finely crushed in a resealable plastic bag using a rolling pin.) Crush remaining 36 cookies to fine crumbs; place in medium bowl. Add cream cheese; mix until well blended. Roll cookie mixture into 42 balls, about 1-inch in diameter.
Dip balls in chocolate; place on wax paper-covered baking sheet. (Any leftover chocolate can be stored at room temperature for another use.) Sprinkle with reserved cookie crumbs.
Refrigerate until firm, about 1 hour. Store leftover truffles, covered, in refrigerator.

I must say those look beautiful, bad thing about being pregnant is I feel like I want and should be able to eat chocolate (or any kind of sweet) anytime I want.. yikes! :) Thanks for all the healthy posts too. I love this new thing you are doing, so fun to read! Keep it up.
Thanks for the super sweet post. We are planning on going to the reunion though we will have like an 8 week old, we'll see how it goes I guess. I just really want to go have that experience. You're welcome to stop by anytime you are down in utah. I'm sure we'll be traveling to washington in the summer so I'll keep ya posted. It sure would be fun to see you guys again. Love you!
These are one of our favorites. I do them at Christmas. I was still in the mood for them so I did them again for my family for Valentines Day and put them in little boxes with homemade cards and gave them each gifts. (And I saved a little stash for me)
